On the programme: an exceptional dinner, live musical entertainment with SO WATT – La balayette à ciel, party favours, and dancing until the end of the night.

• Scallops with seaweed tartare, preserved lemon
• Cod gravlax, beet meringue and wasabi mayonnaise

Amuse-bouche:
Beef and oyster tartare with samphire, yuzu jelly, served in the shell
Starter:
Foie gras “Opéra” with smoked duck breast, red beet jelly, poached fig, reduced port wine, warm brioche, seaweed butter and Espelette pepper

Main course:
Wild turbot steak, nori steam, parsnip prepared in various ways, creamy fish-bone jus with Aquitaine caviar

Aged Brie de Meaux filled with truffle, rocket salad with hazelnut oil
